Ideally you will be trained in all sections with experience of Vegetable, Larder, Fish and with some experience in Sauce or Pastry. The Brasserie is non-accoladed but standards are high and on par with at least 1 Rosette. If you have a solid background and are looking to progress into a busy 100 cover plus operation with the possibility of moving into the fine dining brigade then this could be an ideal opportunity for you.
